Yersinia enterocolitica
Characteristics
Yersinia enterocolitica is found in the digestive tracts of pigs, dogs, and cats, as well as in natural environments. Accordingly, Yersinia enterocolitica-induced food poisoning is caused by meat (particularly pork) and drinks contaminated with the feces of these animals. This psychrophilic bacteria can reproduce even at low temperatures between 0 and 4° C, meaning it can multiply even in food placed in the refrigerator and cause food poisoning.
What are the symptoms of Yersinia enterocolitica infection?
The incubation period for Yersinia enterocolitica is from half a day to 6 days. Symptoms include stomach pain (particularly in the lower right abdomen), fever, and diarrhea.
